SMOKEHOUSE SPECIALTIES
 
   
Our Smokehouse Specialties are prepared from the finest ingredients selected specifically for the Brushy  Mountain Smokehouse.  Boston Butts and St. Louis Style Ribs are cut and trimmed from premium pork to meet our specifications.  Pork butts, chicken and ribs are cooked in our natural gas barbecue pit and smoked to perfection using local hickory logs.  The pork butts are slow-cooked for eleven hours, the ribs and chicken are cooked for two and one-half hours to an internal temperature of 190 degrees.  Cooking the barbecue, chicken and ribs using hickory logs creates a pink tint in the meat and a delicious, hickory smoked flavor.

Down Home Flounder Fillet  
Served battered and fried with Tartar Sauce and Cole Slaw on the side.  This Fillet fits perfect
on a Hoagie Roll.
     
Cheeseburger Deluxe  
We start with a 1/3 lb. of fresh ground beef that’s cooked to order, then add American cheese,
lettuce, tomato, sweet onion, and mayonnaise to create a cheeseburger fit for paradise.
     
Country Ham Sandwich  
Junior Johnson Country Ham with lettuce, tomato and mayonnaise.
     
Open-Faced Pot Roast  
Served “open-faced” on Texas Toast with gravy.
